1 large eggplant, cut into ½ inch cubes
1 loaf ciabatta or Italian bread
1 can or jar of 180 grams Urbani Red Pesto and Truffle
¼ cup chopped fresh basil
3 tbsp extra virgin olive oil
Salt to taste
Pepper to taste
