Tagliatelle “alla Urbani”
Boil the tagliatelle in salted water. In the meantime, prepare the sauce. Heat a small pan with a ladleful of stock and one garlic clove. Bring to a boil, remove the garlic and add in the butter, chopped.
Allow it to melt, season with pepper and salt, and then add in the grated truffles. Bring to a boil again and remove from heat. Drain the tagliatelle when they are “al dente” and transfer them on a warm serving dish, season with the sauce previously prepared and some parmesan. Stir well and serve.
